试剂盒原理ORAC分析法中的自由基主要来源于偶氮化合物2,2'-偶氮-双-(2-眯基丙烷)氯化二氢(2,2'-azobis(2-amidinopropane)dihydrochloride,AAPH)热分解产生的过氧化氢自由基,也可以是芬顿(Fenton)反应过程中产生的羟自由基,以荧光素钠(Sodium Flourescein,FL)为荧光探针,观察自由基与荧光探针作用后,探针荧光强度的衰退过程,以水溶性维生素E类似物(Trolox)作为抗氧化标准物质,检测体系中各种抗氧化剂延缓探针荧光强度衰退的能力,以此评价抗氧化剂的抗氧化能力。
